Rajma Unchawal
  1. 2 teaspoons olive oil, or oil of your choice
  2. 1/3 cup chopped onion
  3. 1/2 cup chopped celery stalk
  4. 1/2 cup chopped capsicum
  5. 200gms head of cauliflower, makes about 1 cup of cauliflower rice
  6. 1 Cup Rajma – Soaked and Boiled
  7. 1/2 teaspoon salt, or more if desired
  8. 2 teaspoons ground cumin
  9. 1 teaspoons Dhania Powder
  10. 1 teaspoons granulated garlic
  11. 1 teaspoons chili powder
  12. 1 teaspoons Italian seasoning
  13. 1/4 teaspoon black pepper
  14. Optional garnishes: coriander, jalapeno, avocado, tomato, etc…
  1. Heat a large pan over medium heat and add olive oil and onion.  Cook for 2 minutes and then add celery and capsicum.  Cook until vegetables are softened, 3-5 minutes.
  2. While vegetables are cooking, roughly chop cauliflower and throw it all into the food processor.  Process until rice like, 30 seconds-1 minute.
  3. Add the cauliflower rice, beans and seasonings to the pan, stir until combined, and cook until cauliflower is tender, 7-10 minutes.
  4. Serve Hot
