Zucchini Hummus Wrap

Ingredients
  

  • 1 zucchini, ends removed and sliced
  • salt and pepper to taste
  • Chilli Flakes
  • 1 tablespoon olive oil
  • 1/2 tomato, sliced (or handful of cherry tomatoes)
  • 1/4th cucumber Sliced OR Picked Gherkins
  • 1/8 cup sliced red onion
  • 1 cup Baby Spinach, tough stems removed
  • 1 Healthy Tortilla
  • 2 tablespoons hummus
  • Optional – Feta Cheese 20 Gms
  • Optional – 2-3 Slices of Jalapeno

Instructions
 

  • Heat a skillet or grill to medium heat.
  • Remove the ends from the zucchini and slice length wise into strips. Toss sliced zucchini in olive oil and sprinkle with chilli flakes, salt and pepper.
  • Place sliced zucchini directly on grill and let cook for 3 minutes, turn and cook for 2 more minutes.
  • Set zucchini aside.
  • Place the tortilla on grill for approximately one minute, or just until grill marks are visible and tortilla is pliable. Alternatively Roast on a tava.
  • Remove tortillas from grill and assemble the wrap, 2 tablespoons of hummus, , zucchini slices, 1/2 cup Baby Spinach, onion, Cucumber and tomato slices.

Optional Step :

  • Crumble The Feta and thin sliced Jalapenos
  • Wrap tightly and enjoy immediately.
