Warm Glass Noodle Garden

Ingredients
  

  • 50 gms Glass Noodles
  • 1 Tbsp Olive Oil
  • 1 Garlic Clove – Crushed
  • 1 cup Steamed Edamame Beans (Can be replaced by peas or kidney beans but Edamame is the best option)
  • 1 Spring Onion – finely Chopped with the green part
  • 1 Fresh Red Chilli/Birds Eye Chilli/Green Chilli
  • 1 Tbsp Chopped Coriander
  • 1 Tbsp Chopped Mint
  • 1 Tbsp Toasted Sesame Seeds
  • Salt to Taste

Sauce:

  • 1 Tbsp Grated Galangal or Fresh Ginger Root
  • 1 Tbsp Lime Juice
  • 1 Tbsp Groundnut oil
  • 1 tsp Palm Sugar
  • 1 Tsp Tamarind Pulp
  • ½ Tsp Soy Sauce
  • Salt to taste

Instructions
 

  • Soak the noodles in hot water for 5 Mins or until almost soft.
  • Whisk together all the sauce ingredients
  • Heat t he Olive oil in a broad pan or wok and add the garlic – Once it turns Golden, Remove the pan from heat and add the edamame and noodles – Fold in the sauce and garnish with spring onions and toasted sesame seeds.
