Warm Glass Noodle Garden
Ingredients
- 50 gms Glass Noodles
- 1 Tbsp Olive Oil
- 1 Garlic Clove – Crushed
- 1 cup Steamed Edamame Beans (Can be replaced by peas or kidney beans but Edamame is the best option)
- 1 Spring Onion – finely Chopped with the green part
- 1 Fresh Red Chilli/Birds Eye Chilli/Green Chilli
- 1 Tbsp Chopped Coriander
- 1 Tbsp Chopped Mint
- 1 Tbsp Toasted Sesame Seeds
- Salt to Taste
Sauce:
- 1 Tbsp Grated Galangal or Fresh Ginger Root
- 1 Tbsp Lime Juice
- 1 Tbsp Groundnut oil
- 1 tsp Palm Sugar
- 1 Tsp Tamarind Pulp
- ½ Tsp Soy Sauce
- Salt to taste
Instructions
- Soak the noodles in hot water for 5 Mins or until almost soft.
- Whisk together all the sauce ingredients
- Heat t he Olive oil in a broad pan or wok and add the garlic – Once it turns Golden, Remove the pan from heat and add the edamame and noodles – Fold in the sauce and garnish with spring onions and toasted sesame seeds.
