Minestrone Soup
Ingredients
- 1 Cup Cooked Rajma
- 1 Cup Chopped Celery Stalk
- 1/2 Cup Carrots Diced
- 1/2 Cup Green Beans Diced
- 1/2 Cup Diced Zuchinni
- Puree of 3 Blanched Tomatoes
- 1/2 Onion Fine Chopped
- 4 cloves of garlic - paste
- 1 Tsp oregano
- 1 Tsp dried basil
- 1/2 Tsp Sugar
- 1 Tsp pepper/cayenne pepper
Instructions
- Garnish with chopped fresh basil leave and 1 tsp of grated parmesan or processed cheese and olive oil.
Notes
- Saute the onions and garlic and add all veggies once they sweat.
- Add the spices and tomato puree and let it simmer.
- Add Rajma and 2.5 cups water and bring to a boil.
