Minestrone Soup

Ingredients
  

  • 1 Cup Cooked Rajma
  • 1 Cup Chopped Celery Stalk
  • 1/2 Cup Carrots Diced
  • 1/2 Cup Green Beans Diced
  • 1/2 Cup Diced Zuchinni
  • Puree of 3 Blanched Tomatoes
  • 1/2 Onion Fine Chopped
  • 4 cloves of garlic - paste
  • 1 Tsp oregano
  • 1 Tsp dried basil
  • 1/2 Tsp Sugar
  • 1 Tsp pepper/cayenne pepper

Instructions
 

  • Garnish with chopped fresh basil leave and 1 tsp of grated parmesan or processed cheese and olive oil.

Notes

  1. Saute the onions and garlic and add all veggies once they sweat.
  2. Add the spices and tomato puree and let it simmer.
  3. Add Rajma and 2.5 cups water and bring to a boil.
