High Protein Stew

- 1/2 Cup Masoor ( Saboot)
- 1 Cup Mixed Veggies of Choice
- 1 Onion - Finely Chopped
- Fresh ground pepper - 1 tsp
- 1 Bayleaf
- Italian seasoning - 2 tsp
- Salt to taste
- 2 Cups Veg Broth or Water
- 2 Spoons Coconut Milk
- In a pressure pan, heat some oil and add bay leaf and onions
- Once the onions are transparent, add the remaining ingredients and pressure cook for 3 whistles.
- Release the pressure and stir well.
- Stir in the coconut milk and serve.
