Chickpeas Quinoa Salad

Ingredients
  

  • 1 Finely Chopped Onion
  • 1 Cup Boiled chickpeas
  • 1 Cup Diced Tomato
  • 1/2 Cup Diced Bell Peppers
  • 1 Cup Quinoa - Cooked
  • 1/2 Cup mix of roasted pine nuts, pumpkin seeds, melon seeds
  • 2 Cups Mixed Greens(Lettuce, Arugula, Rocket)

Instructions
 

  • Home Made Dressing
    Olive Oil 2 Tsp
    Lemon Juice 1 Tsp
    Sugar 1 Tsp
    Salt Pepper to taste
    Chilli Flakes 1 Tsp
    Cumin Powder 1/2 Tsp
    Zatar Spice 1 Tsp(Optional)

Notes

  1. Mix all the ingredients together and freeze.Drizzle with the home made dressing before consumption.
