Berry Truffles

Ingredients
  

  • 1 Cup Dried Berries (Blueberries or Cranberries)
  • ½ Cup Unsalted Sunflower seeds
  • 8-9 Black Dates
  • ½ Cup Rolled Oats
  • 1 Tsp Vanilla Extract

Notes

  1. Process all the ingredients except dates and vanilla extract in the food processor or blender for 10 mins
  2. Add the dates and vanilla extract and blend again for a few minutes until the dough holds together when rolled. If its too dry add another date or two
  3. Roll out the dough into small truffles using about 1 heaped tsp per ball
  4. Dust the balls with cacao powder/matcha powder or desiccated coconut
  5. Store in the fridge and enjoy
