Bean Fajita Pasta

Ingredients
  1. 2 bell peppers chopped (Red, Yellow or Green)
  2. 1/4 cup  onion chopped
  3. 2 Tomatoes- Chopped
  4. 1.5 Cups Black beans or Rajma - Cooked
  5. 1/2 cup  corn kernels – Boiled and Charred
  6. 2 teaspoons chili powder
  7. 1 teaspoon cumin
  8. Salt to taste
  9. 2 cups Veg stock or Water
  10. 1 Cup Pasta or Quinoa
  11. ½ Cup Cheese – Grated – Optional
  12. Cucumber Strips - Optional
  13. Lime Juice – 1 tbsp
Instructions
  1. In a medium pot, combine all ingredients including pasta/quinoa and stock. Cover and bring to a boil, then reduce heat and simmer for 15 minutes, stirring every couple of minutes.
  2. Stir in the lime juice and cheese, until evenly distributed and melted.
  3. Garnish with Cucumber Strips, Lime wedges and Coriander
